Pumpkins, pumpkins are everywhere this time of year. One of my favorite foods is muffins! There is nothing like a sweet, soft muffin first thing in the morning with a hot cup of coffee or tea. I always thought I would have to limit myself to these tasty treats, until I re-invented them the Oi way!
Over the weekend I was on a mission to re-create a pumpkin muffin to be not only good for me, but, YUMMY!
One thing I have found with many "healthy" recipes is that they may have great ingredients, but they seem to fall short in the great taste category! But HOPE (and great yummy taste) is here!
Now I can have a muffin whenever I want! And one of the best things is it actually tastes like a muffin! And eating the Oi way I slather some butter on it and I am good to go!
- 3 eggs
- 1 cup pumpkin puree
- 1/4 cup coconut oil
- 1 teaspoon vanilla
- 2 tablespoons pumpkin pie spice
- 1/4 cup Swerve
- 1 tsp Stevia Glycerite
- 1/4 cup coconut flour
- 1/4 cup protein powder ( I used Teras Whey Vanilla Protein Powder)
- 1 teaspoon baking soda
- 1/4 teaspoon himalayan salt or sea salt
Preheat oven to 400°. Line a muffin pan with paper cupcake liners. Mix the eggs, pumpkin puree, and coconut oil with a hand mixer. Add in the vanilla, pumpkin pie spice, Swerve and stevia and blend well.
In a small separate bowl mix the coconut flour, protein powder, baking soda and salt. Give the dry ingredients a quick stir. Mix the dry ingredients with the wet ingredients.
Pour mixed ingredients into muffin liners.
Bake for 15-18 minutes.
Muffins are done when toothpick comes out clean. Makes 6 large muffins.
